Blue Powerade Cupcakes

Many, many moons ago, one of our lacrosse boys challenged me to make their favorite sports drink into a cupcake; could Powerade Cupcakes be possible? I put him off for months because of the lacrosse schedule, then classes, then the holidays, but yesterday I finally conquered this giant challenge and invented what I believe are the world’s FIRST Blue Powerade Cupcakes!

Based on the Golden Vanilla Cake recipe from King Arthur Flour, I used Powerade powder to add that special flavor that so many athletes recognize to these very blue cupcakes. Since the base powder isn’t overly sweet, the cupcakes really retain the flavor I was going for without overwhelming your mouth which too much sugar or an overly electrolyte-y flavor. The dense cupcake acts as a great base to the light and fluffy, but flavorful, frosting that’s also full of the Powerade powder. These cupcakes even smell like Powerade!

These Blue Powerade Cupcakes passed the teenage boy seal of approval, which I take as high praise indeed! Be forewarned that they may dye your mouth a little blue based on how much food or icing coloring you use in the frosting : )

Blue Powerade Cupcakes

  • 1 cup sugar
  • 1 ⅝ cup flour
  • 1 ¼ teaspoon baking powder
  • ½ teaspoon salt
  • ⅜ cup unsalted butter, softened
  • ⅝ cup milk
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 ounce blue powerade powder
  1.  Preheat the oven to 350°F. Prepare a 12-cup cupcake pan with cupcake liners.
  2. Whisk together the sugar, flour, baking powder, powerade powder and salt in an electric mixer. Add the butter and beat at low speed, until the mixture looks sandy.
  3. Add milk and vanilla, then mix at low speed for 30 seconds, then medium for 30 seconds. Scrape the bottom and sides of the mixing bowl.
  4. With the mixer on low, add 1 egg, then increase the speed to medium and beat for 30 seconds. Repeat this procedure with the second egg. Scrape the bowl once more, then beat at medium-high speed for 30 more seconds.
  5.  Fill each cupcake liner approximately ²/3 full. Bake for 23 to 25 minutes, or until a toothpick inserted in the center of a cupcake comes out clean.

Blue Powerade Buttercream Frosting

  • 1 cup butter (very, very soft)
  • ½ cup shortening
  • pinch of salt
  • 4 cups powdered sugar (approx.)
  • 1 ounce blue powerade powder
  • blue food coloring
  1. Combine butter, shortening and salt in mixer bowl. Beat until well-combined and fluffy.
  2. Add powerade powder, begin mixing on low, adding powdered sugar until you reach the desired consistency. Beat on med-high to make really fluffy.
  3. Add blue food coloring until you reach your desired color.

You could customize these cupcakes by using any flavor of sports drink powder you choose. They’d be great for a sports banquet at school or a sports themed birthday party in little Powerade cups!
